You don’t have a number, you have a SIP account, this account is used by the service provider to authenticate you. Then based on their policy they may assign a phone number to you, hide it or show it when you make calls according to their service policy . It is up to the SIP server to perform this function not the client.

If you want to have a SIP account without revealing your real identity you must create an account like anonymous at invalid.org for example and use it for outbound calls instead of a regular SIP account which has your account username and domain.
